ANSI 130 - Classification, Grading and Selection of Meats 3 Hour(s)
Prerequisite(s): Instructor consent required. This course includes advanced grading of beef, pork and ham carcasses with special emphasis on correlation of grading factors with USDA. Provides preparation for meat judging team. Six hours recitation/lab per week.
